Happy Sunday! Usually the first thing I do on weekend mornings before getting out of bed is scroll through Insta then wander over to Pinterest to see if anything peaks my interest, food or craft, in what I want to do that day. This morning I came across a pic of toast, avocado, and poached egg…now I’ve been hearing about this for a while now and it being all the rage so I figured it was time to try and omg I’m so glad I did! This is by far my new fav food for anytime not just breakfast!
Mom found a recipe for blackberry margaritas on pioneer women (one of her fav foodie blogs) and made it up for Cinco de Mayo along with chicken enchiladas and tamales we got at the farmers market last weekend!
Mexican Salad: lettuce, spinach, cherry tomatoes, corn, black beans, grilled chicken, avocado, and green peppers topped with Pace salsa (medium)
Easy dinner night, I grilled some eggplant in olive oil, cut up some mozzarella, chopped handful of fresh basil and layered it all on ciabatta bread, then drizzled with balsamic. Topped it off with a glass of Pinot Grigio
