My mom made up this recipe last night for dinner and WOW. She said she was inspired by the pineapple being on sale at the store and just getting back from Florida!
Ingredients and recipe below, I was’t around for the prep so I only have finished product. She said it was super easy (15min) and a no brainer to add to the meal line up. The pic looks basic and it is, but packs sooo much flavor! It is a must try!
- Thin Cut Free Range Chicken Breast
- King Hawaiian Rolls
- Teriyaki Sauce
- Fresh Pineapple
- Cheddar Cheese
- Zuchinni & Olive Oil (side, optional)
She got thin cut free range chicken breast and cut them into 4-6 smaller pieces per breast (for sizing, each piece will sit on King Hawaiian Rolls)
Then she brushed teriyaki sauce on one side of chicken and set that to the side to marinate for a couple minutes while she did the bacon and pineapple
Next, she cut up a fresh pineapple into slices and then cut those down into similar sizes as the chicken, then she grilled the pineapple slices on a grill pan until they had grill marks on each side.
She also cooked up 4 slices of bacon and cut the slices into 12 smaller pcs
She then came back to the chicken and grilled the chicken teriyaki side down and put teriyaki on the other side while that cooked for about 2 min, she kept flipping 2 min each side until cooked. She only had to flip two more times.
While each side of the chicken was cooking she cut some cheddar slices from a block and placed a slice on the cooked chicken to let it melt.
Once all done she assembled the sliders. Hawaiian rolls (cut in half), put a piece of the chicken on with cheese, then a piece of bacon and grilled pineapple
For a side she cut up some slices of zuchini and grilled those in a pan with just some olive oil until soft.
